Preparation
Soak the rava in water for about 30 minutes and then grind it in a mixer to a smooth paste.
Dough Making
Combine the wheat flour and the ground rava in a large mixing bowl.
Add salt to taste.
Gradually add water and knead to form a smooth and stiff dough. The consistency should be such that it is not too soft, as it will not hold shape while frying.
Cover the dough with a damp cloth and rest for 15-20 minutes.
Rolling the Puris
Make small round portions. (Approximately 30 balls)
Lightly grease a rolling pin and surface. Roll each ball into a small, round disc,
approximately 3-4 inches in diameter. Ensure the discs are thick enough or will not puff up when frying.
Frying the Puris
Heat oil in a deep frying pan over medium heat. To check if the oil is hot enough, drop a small piece of dough into the oil. The oil is ready for frying if it sizzles and rises to the top.
Gently slide the rolled puris into the hot oil, one at a time. Press gently with a slotted spoon to help them puff up.
Fry until golden brown, turning once to ensure even cooking.
Remove the puris with a slotted spoon and place them on paper towels to drain excess oil.
Serving
Serve the puris hot with a side of potato masala, chana masala, or any other curry or side dish you choose.
